Getting your five a day ...



How to transform courgettes into something yummy.  Unfortunately, I was too impatient to line the tin.  My cake was greeted with "don't put that on your blog Mum, one slice might look rustic but the whole cake implies shoddy baking".  Tastes good though.  If you have a glut of courgettes and willing to line a baking tin, you can find the recipe here.  So far today my raspberry frozen yoghurt has been turned down and my fresh pea risotto was described as 'cheesy'.  I am beginning to get a complex.

  5. I have never tried courgette cake but it looks divine! Sadly I didnt grow any courgette plants myself so I dont have a glut, I buy them individually from the shops!

  6. Sigh... there's just no pleasing some food critics! ;-) It all looks and sounds very yummy to me! I'm not a big fan of courgettes but am intrigued by the cake - may have to give it a try sometime.

  10. My sister once made me a courgette cake - and although I adore courgettes in any form, I think the cake was my least favourite. And this is no reflection on my sister's baking as she's a real expert. However, I love carrot cake and also beetroot and chocolate - great combination. Any ideas on what to do with a glut of cucumbers...? And I can't imagine why anyone could turn up their nose at frozen raspberry yogurt - sounds delish!

  12. Looks great, lovely thick layer of icing on there, yum! I love courgettes but haven't tried them in a cake yet. It's on my to do list, along with parsnip cake!
