My, that looks good - so much nicer than the (dry) parkin I just made. Dry despite five days 'maturing' in greaseproof paper. The best kind of cakes are the ones you can eat soon after baking them.And raspberries, cream and sponge are a pretty good combination. Hope you enjoyed and devoured it!
