My, that looks good - so much nicer than the (dry) parkin I just made. Dry despite five days 'maturing' in greaseproof paper. The best kind of cakes are the ones you can eat soon after baking them. And raspberries, cream and sponge are a pretty good combination. Hope you enjoyed and devoured it!
